Greek Meatball and Rice Soup (Youvarlakia)

My mom is a master at this soup. Thing is, if you ask her for the recipe she will say “you put a little of this, a little of that” and you are left to figure out how much “a little” is. Well, after lots of practicing I feel that I have mastered this soup! I make it with ground turkey but you can also use 1/2 lb. of ground beef and 1/2 lb. of ground pork and mix them together. I also add spinach to the soup and I add lemon juice at the very end. Delicious and hearty. Kαλή όρεξη (enjoy your meal).
Ingredients
- 1 lb. ground turkey
- 1 small onion, grated
- 1 garlic clove, grated
- 1 egg
- 1 lemon, squeezed
- 2 cups rice
- 2 cups spinach
- 1 teaspoon oregano
- 3 cups chicken broth
- salt & pepper
- 3 teaspoons olive oil
Method
Step 1
In a large pot, add chicken broth and fill the rest of the pot with water (around 8 cups). Bring to a boil.
Step 2
In a large bowl, combine the meat, egg, onion, garlic and 1/2 cup of rice. Add oregano and a pinch of salt and pepper. Use your hands to mix all ingredients together.
Step 3
Make small meatballs with the mixture and add them to the pot of boiling water. Add the olive oil.
Step 4
Add 1 1/2 cups of rice to the pot of boiling water and reduce heat to medium. Cook for 30 minutes, stirring occasionally (after 15 minutes, add the spinach). Add salt to taste and squeeze lemon into soup.
