Rice Side Dish

This rice recipe is easy to follow and tastes great. Special thanks to my friend Jenny who taught me the secret to making delicious rice (you add onion + chicken broth). I have taken her recipe and modified it a bit. It makes a great side dish and you can also squirt some lime onto the rice before you serve for extra flavor.
Ingredients
- 1 cup rice (I rinse my rice in cold water, you could use long grain rice too)
- 1/2 onion, chopped
- 1/4 cup olive oil
- 2 cups low sodium chicken broth
- salt to taste (if needed)
Method
Step 1
Add olive oil to saucepan and turn on medium heat. Add onion and cook and stir until it is lightly browned (around 3-4 minutes).
Step 2
Add in rice and cook and stir until some of the rice becomes lightly browned (around 2-3 minutes).
Step 3
Add in chicken broth and stir. Bring to a boil over high heat. As soon as the broth starts to boil, lower the heat to a simmer and cover with a lid.
Step 4
Cook at a simmer for around 12-15 minutes until the broth is completely absorbed and the rice is tender. Check the rice - if it needs more time then let it cook some more (you may need to add a little water).
Step 5
Remove the pot from the heat and let it sit with the lid on for 5 minutes. Serve warm.
