Kale is rich in antioxidants and is so good for you (especially when eaten raw). The key to this salad is finely chopping the kale leaves.

  • 1 bunch kale
  • 1/2 cup finely chopped walnuts (use a food processor or put in a plastic bag and hit with a spoon)
  • 1/2 cup finely chopped seasoned croutons (use a food processor or put in a plastic bag and hit with a spoon)
  • 1/2 cup finely shredded parmesan cheese (you can add more if you like)
  • 1 tablespoon olive oil
  • juice of 1 lemon
  • salt to taste

Step 1

Remove the kale from the stems, rinse thoroughly and pat dry with a paper towel. Chop the kale into very small pieces and place into large bowl.

Step 2

Add the parmesan cheese, walnuts and breadcrumbs and mix all together (to make this 'gluten free' you can skip adding the breadcrumbs).

Step 3

Add olive oil and lemon juice for the dressing. Taste to see if you need to add a sprinkle of salt (sometimes there is enough salt from the cheese). Enjoy!
