Arugula Salad with Goat Cheese, Candied Walnuts and Egg

Delicious arugula salad recipe with a nice mix of bitter, sweet and crunchy! Even more delicious when you add an egg.


  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1/4 cup candied walnuts
  • 1/4 cup goat cheese, crumbled
  • 1 egg
  • baby arugula


Step 1

In a large salad bowl, combine arugula, goat cheese and candied walnuts.

Step 2

In a small skillet, add olive oil and fry an egg (over medium or however you like).

Step 3

Place egg on top of arugula and drizzle with olive oil and balsamic vinegar. Add salt and pepper to taste.
