This salmon salad is delicious. I learned the recipe from my mother in law and have modified it a bit. The first time she made it I completely fell in love. I especially love the crunch from the onions. Easy and quick!

This is the salmon I use (from Costco):

Ingredients

  • 1 can of Wild Alaskan Salmon (I get mine at Costco, see picture above)
  • 1/2 avocado, chopped
  • 1/2 onion, chopped
  • 1 tomato, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • pinch of salt
  • crackers (I use thin salted Matzos)

Method

Step 1

In a large bowl, gently toss together the salmon, avocado, tomato and onion.

Step 2

Add lemon juice, salt, olive oil and stir to combine.

Step 3

Serve over crackers (or you can serve over lettuce and eat it like a lettuce wrap).
